Ingredients

For the Crispy Rice Paper Shell

  • ◆Triple Elephants Rice Paper
  • ◆Water

For the Udon Filling

  • ◆Yokoso Udon Noodles
  • ◆Kewpie Roasted Sesame Dressing
  • ◆Lee Kum Kee Japanese Soy Sauce
  • ◆Lao Gan Ma Chilli Crisp

For Garnishing

  • ◆Kewpie Mayonnaise
  • ◆Fresh scallions, finely chopped

Step 1: Prepare the Rice Paper

Place one sheet of Triple Elephants Rice Paper on a plate. Lightly apply water around the edges until they soften. Place a second rice paper sheet on top and gently press around the edges so both sheets stick together. This double layer creates a stronger shell that crisps beautifully while puffing up during frying.

Step 2: Puff the Rice Paper

Transfer the prepared rice paper onto a hot frying pan. Cook until the rice paper becomes golden, crispy, and puffs into a hollow ball. Remove carefully and allow it to cool slightly.

Step 3: Prepare the Sauce

In a bowl, combine:

  • ◆Kewpie Roasted Sesame Dressing
  • ◆Lee Kum Kee Japanese Soy Sauce
  • ◆Lao Gan Ma Chilli Crisp

Mix well until smooth and evenly combined. The result is a rich, creamy, nutty sauce with plenty of umami and just the right amount of heat.

Step 4: Cook the Udon

Boil the Yokoso Udon Noodles according to the instructions on the package. Drain well, then add the noodles directly to the prepared sauce. Toss until every strand is evenly coated.

Step 5: Fill the Crispy Shell

Using a small knife or scissors, carefully make a small opening in the crispy rice paper ball. Stuff the saucy udon noodles inside until generously filled. Flip the stuffed rice paper so the opening faces down for a neat presentation.

Step 6: Garnish & Serve

Top with generous lines of Kewpie Mayonnaise and finish with freshly chopped scallions. Serve immediately while the shell is still crispy for the ultimate crunchy, chewy experience.
